Almond Chocolate Chip Biscotti

We are espresso lovers in this little apartment and are constantly looking for sweet bites to pair with our cappuccinos. Not only are these almond chocolate chip biscotti a great addition to any hot beverage, but they’re also incredibly easy to make– and you probably already have the ingredients! Almond extract might be the one thing you need to buy, and if you prefer to leave it out or replace it with vanilla, you can make plain old chocolate chip biscotti. Except, anything with chocolate can’t ever be too plain!

Almond Chocolate Chip Biscotti

Ingredients (makes about 2 dozen biscotti):

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 4 tablespoons (1/2 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs (we used chia-seed egg replacement for this but regular eggs should work!)
  • 1 teaspoon vanilla extract
  • 2 teaspoons almond extract
  • 1 cup dark-chocolate chunks

Instructions:

  1. Preheat the oven to 350F. Line a large baking sheet with parchment paper or cover with a bake-safe silicone sheet.
  2. Whisk the flour, baking powder, and salt together in a bowl.
  3. Using an electric mixer, beat the butter and sugar together in a separate bowl until light and fluffy. This should take about 3 to 6 minutes. Beat in the eggs one at a time, then add the vanilla and almond extracts until combined. Scrape the bowl and beaters as needed.
  4. Reduce the mixer speed to low and slowly mix in the flour mixture until combined. Add the chocolate chips until incorporated.
  5. Press the dough into two 13×2-inch loaves on the baking sheet, spaced a few inches apart.
  6. Bake approximately 35 minutes until slightly golden on top. Rotate the baking sheet halfway through for even heating.
  7. Let the loves cool for about 10 minutes and lower the oven temperature to 325F.
  8. Place the loaves on a cutting board and slice them to 3/4-inch thick pieces. Lay them on the baking sheet about 1/2-inch apart and bake until crisp and golden brown, about 15 minutes. Flip the slices halfway through.
  9. Let the biscotti cool before serving– if you can resist!
