Strawberry-Lime Chia Seed Jam 2

Is chia seed jam all the rage or what! It’s a brilliant idea– to use the natural gooey texture that results from combining chia seeds and moisture– as a way to give a fruit spread all of its gooey potential.

Since strawberries are in season, I decided to try my hand at making my own chia seed jam, with a twist: lime! This spread is so delicious and tastes a bit like a strawberry margarita. 

This jam is:

Tangy.
Sweet.
Spreadable.
Versatile.
Healthy.

Furthermore, strawberries are actually better for you cooked; the cooking process releases the phytonutrients in the redness of the fruit (source: Eating on the Wild Side, one of my favorite food books). Win!

And the best news? You can make this jam without any sugar at all. That’s right; say goodbye to store-bought artificial jams because this stuff is amazing!

So spread this stuff on homemade breads, mix it into yogurt, or eat it straight for a tangy dessert. It’s surprisingly good for you; just look at the ingredients list!

Strawberry-Lime Chia Seed Jam- a perfect delicious jam recipe that tastes like a margarita

Strawberry Lime Chia Seed Jam

Ingredients

  • 1.5 cups strawberries, roughly chopped.
  • Juice and zest of one lime
  • 2 tablespoons chia seeds
  • 2 tablespoons honey

Directions

In a small saucepan over medium heat, cook the strawberries, lime juice, zest and honey until the strawberries are tender, about 5 minutes. Add the chia seeds and cook until a gel-like substance is formed. Add a splash of water if the mixture appears too dry. Taste and add more honey for sweetness, if desired.

    Oh. My. Goodness. Yum! And I LOVE that there’s no refined sugar in it. Fruit is so sweet on its own, especially when it’s cooked down. I have to admit I was a little skeptical when I saw this subject line in my email, but now I have to try it because it looks so tasty!! Nice photos, by the way! I’m trying to think of other variations as well . . . lemon, mango, pineapple. Mmmm, summer. 🙂

      Hahaha I know right?! Chia seeds are kinda weird, but they’re super healthy and so useful giving things a gel-like texture. I hope you try this; it’s so yummy and a great jam/jelly alternative!

      Thanks girl! It’s super easy– and with chia seeds you don’t have to buy fruit pectin (the stuff that usually gives jams their texture)

        You cut up fresh strawberries, put them in a bowl pour a half gallon of whole milk over them and a cup of sugar. You let it sit for a day and then eat it. It’s quite yummy.. you should try it.

    This looks so good! My mom and I were saying how we want to go strawberry picking and make jam but she didn’t like how much sugar we’d have to put into it. This is perfect! I also didn’t know strawberries were better for you when cooked, I always thought raw is generally better!
